The design of the plantation allows us to perform the harvest and post-harvest practices separately. Thanks to this, we are able to offer cocoa beans by  each clone or in a blend with a single origin.

We offer cocoa beans with different aroma and flavor profiles, which we have developed with the cooperation of experts chocolatiers.

BLEND 1

Varieties: FSV41, FSV155, TSC01

Complex and subtle blend with vinous acidity that plays with the sweetness and the bitterness. Low astringency with walnut and fresh fruit notes.

BLEND 2

Varieties: FEAR5 , FSA13, ICS1, FEC2

Guayupe Provides an intensive cocoa flavor with intensive nutty flavor and complementary attributes of dried, tropical and woody fruits. notes.

PROCESS

Currently, we have standardized fermentation and drying protocols. The cocoa beans are fermented under controlled conditions of time and temperature in boxes and barrels fermenters.

Drying is done naturally by the sun. On days with high rainfall, the grains go through a stainless steel mechanical dryer, this guarantees a humidity of 7%.

After drying, a mechanical and manual classification are carried out to guarantee the best quality.

Finally, the grains are packed in high-tech bags and fique sacks and are stored under controlled conditions of temperature and humidity in order to preserve the quality, aroma and flavor.
